Recipe for a quick and healthy dinner

Garlic Lemon Chicken & Veggie Stir-Fry

Ingredients (2 servings)

  • 2 small chicken breasts (sliced thin)

  • 2 cups mixed vegetables (broccoli, carrots, bell peppers, beans)

  • 3 cloves garlic (minced)

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp black pepper

  • 1/2 tsp salt (or to taste)

  • 1 tsp soy sauce (optional)

  • Fresh coriander or parsley (optional garnish)

Instructions

  1. Heat 1 tbsp olive oil in a pan over medium heat.

  2. Add sliced chicken, sprinkle salt and pepper, and cook for 5–7 minutes until lightly golden. Remove and set aside.

  3. In the same pan, add the remaining oil and sauté garlic for about 30 seconds.

  4. Add the vegetables and stir-fry for 4–5 minutes until slightly tender but still crisp.

  5. Return the chicken to the pan, add lemon juice and soy sauce, and cook for another 2 minutes.

  6. Garnish with coriander/parsley and serve hot (pairs well with brown rice or whole-wheat roti).
